Try eating on $1.05 a meal and you’ll know a better food stamp benefit is needed

What do a congressional representative, an executive and the vice mayor of Asheville have in common? All participated in MANNA FoodBank’s “$1.05-A-Meal Challenge.”
The challenge had two goals. First, to experience living on the minimum food stamp allotment of $1.05 per meal. Second, to raise awareness about the Farm Bill which contains funding for federal nutrition programs like food stamps and The Emergency Food Assistance Program (TEFAP).
Individuals and families around Western North Carolina took the challenge in October, but all ended up experiencing similar things. Here’s a look at what some of the participants had to say in their own words.
Time and planning
Those who took the challenge took it seriously — planning meals and cooking at home. “My wife and I planned an entire seven-day menu before starting in order to make use of all leftovers, and in some cases cooked larger amounts to be used in another meal” said Buddy Gaither, president of Milkco, Inc. and MANNA board member.
